Since 1983, El Trapiche has become a pillar of Panamanian gastronomy. Founded by a group of passionate foodies, our restaurant was created to showcase the rich flavors and culinary traditions of Panama to a wider audience.
Our History
Founded in 1983, El Trapiche is a beacon of Panamanian tradition, bringing authentic flavors and culinary heritage to the Panama City dining scene.
Alfonso Jaén, Domingo de Obaldía and Santiago Anguizola (all with roots in different regions of our country) each contributed their family recipes to create a menu that offers the flavor of Panama with all its regional nuances.
As El Trapiche's reputation grew, the 2010s marked a period of expansion with the opening of new locations, bringing our traditional flavors to more neighborhoods. It was also around this time that we received our first culinary award, in recognition of our commitment to Panamanian cuisine.
Entering the new millennium, El Trapiche embraced innovation while honoring its roots. We integrated modern cooking techniques with traditional recipes and deepened our commitment to the community through initiatives such as culinary training programs for local youth and partnerships with Panamanian farmers.
Today, after more than 40 years in operation, we consider ourselves much more than a restaurant, but guardians of the culinary traditions of Panama.
